I absolutely LOVE the concept of Charles E. Fromage and think readers would love to hear the birth story- how did Charles E. Fromage come to be?
I was taking my nephews to Chuck E. Cheeses - much to my dismay - and decided to change it up to make it sound more appealing. Everyone who heard it thought it was quite funny. Those nephews are now in their mid-thirties with kids of their own. The original concept was much more game-heavy, but the space we ended up in sent us in another direction - and that has been very good, indeed.
What made you choose West Vliet Street?
My sister owns Rainbow Booksellers, so our family has been a part of Vliet Street for the last 25 years. One of her customers mentioned they were selling the building, and we decided that you couldn't get much better for our concept than this neighborhood.
What is your all-time favorite wine and cheese pairing?
I really like our Mary Taylor Anjou Blanc - and any wine is improved with our 5 Cheese Glop!
If visitors try only try one thing on your menu, what would it be?
Well, the 5 Cheese Glop was already mentioned. We do have a lovely nut flight that includes 3 of our tasty house-made nuts. The perfect accompaniment to the beverage of your choice.
What are your goals for Charles E. Fromage for the next five years?
Hard to say. Who knew one of our first goals would be to stay open through a global pandemic? I do know we hope to become a go-to for small gatherings of all kinds: from book clubs to wedding receptions. We have hosted wine tastings, birthday parties, anniversaries, farewell/retirement parties, wedding showers, and even a full wedding. We are open to any ideas a customer might have for entertaining in the bistro. Whatever the future holds, we are glad we are on West Vliet Street with some of the nicest neighbors one could ask for.
